Spagetti? Spagheti? Spaghetti?
The more you stare at the word, the more you wonder how the hell you spell it. I wrote it incorrectly four times. Four. Times. Embarrassing to call myself a writer, thank god for spell check.
This week has been both tiring and boring and I couldn’t be bothered to come up with anything creative for dinners. I did a 20 minute food shop early Monday morning - no shopping list, just rogue in the supermarket picking up the essentials: milk, bread, eggs and of course, meatballs. Going rogue is always a risk, I’ve been known to pick up obscure ingredients and then sit at home wondering what to do with it.
So, what do we do when we’re out of dinner ideas? We return to simple, classic recipes.
Last night, I pulled together a very simple spaghetti and meatballs dinner. I even used store bought sauce - a spicy tomato and chilli.
I did a simple seasoning for the turkey meatballs: black pepper, small bit of salt, some chilli powder (I love spicy foods) and a drizzle of olive oil. Lightly tossed together in a bowl.I roughly chopped one yellow onion and three garlic cloves. Cooking these first for a few minutes and then adding the meatballs in.
Honestly, it was delicious. It was spicy and garlicky, the pasta were perfectly al-dente, something I don’t always achieve. I absolutely devoured it and there was just enough left over to have for lunch today. Two meals, one recipe.
The beauty of simple recipes lies in their accessibility, versatility, and ease of preparation. I also think its important to highlight that you don’t have to have fancy meals every week - we’re not all instagram content creators and to be one, I’m sure, is exhausting. I can’t be whizzing up 20 ingredient kale salads with three sides to pair. Sometimes, something hearty and carb heavy, is perfectly alright.
